Achievement unlocked: game crashes on Windows resolved by looking at people's workarounds on ProtonDB.

Turns out it was actually just a problem with the game, not with WINE, but ProtonDB was the only place with up-to-date information about it

the game was the sims 2 which uses directx 9 wrong. nvidia can work around it fine, dxvk mostly can, amd cannot
